Tomato and feta one-pot pasta

This delicious and easy pasta recipe is creamy, flavourful, and perfect for a quick weeknight meal with minimal clean-up!

 

Tomato and feta one-pot pasta: serves 4

Ingredients

  • 1 tbsp oil (best with olive oil)
  • 2 cloves garlic, minced
  • 1 tin of chopped tomatoes
  • 2 cups of dry pasta*
  • 3 cups vegetable stock* (made with 1 stock cube and 3 cups boiling water)
  • 1 block feta cheese*, crumbled
  • 1 teaspoon dried oregano (optional)
  • Salt and pepper, to taste

Method

  1. Heat the olive oil in a large pot over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  2. Add the tin of chopped tomatoes and stir to combine.
  3. Add the pasta, vegetable stock, and dried oregano to the pot. Stir well and bring to a boil.
  4. Reduce the heat to a simmer and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
  5. Stir in the feta cheese and season with salt and pepper. Mix until the feta is creamy and well combined.
