Swede and carrot soup

This swede and carrot soup is quick, easy and cheap to make, and perfect for using up leftover veg. 

 

Swede and carrot soup: serves 6-8

Ingredients

  • 2 tbsp oil
  • Roughly 1 kg swede and 1 kg carrots (you can use leftover cooked veg)
  • ½ onion
  • 1 garlic clove (optional)
  • 1 litre vegetable stock (made from a stock cube)

Method

  1. Chop the onion (and garlic if you are using this) and pop in a saucepan. Fry in the oil until soft.
  2. Peel and chop the swede and carrots and add to the onion. Stir for a couple of minutes.
  3. Add the stock and bring to the boil. Simmer gently until the vegetables are soft.
  4. Blend the soup until smooth.
  5. Serve with herbs or spices of your choice on top. (One suggestion is black pepper and a few croutons made from leftover bread.)
