Vegetarian sausage casserole

A lovely warming vegetarian sausage casserole recipe, prepared in the slow cooker ready for when you get home in the evening.

 

Vegetarian sausage casserole: serves 4-6

Ingredients

  • 1 tbsp oil
  • 1 onion, peeled and chopped
  • 1 large sweet potato, cut into small cubes
  • 1 large potato, cut into small cubes
  • 1 yellow pepper, chopped
  • 2 carrots, sliced
  • 2 vegetarian hotdogs* per person
  • 1 tin chopped tomatoes
  • 2 tsp paprika (optional)
  • 150ml water with one vegetable stock cube*

Method

  1. Add all the ingredients to the pan and cover with the lid.
  2. Cook on high for the first hour, then reduce to low and cook for 5-6 hours.
  3. Serve with crusty bread*, rice, pasta*, mashed potatoes etc.
