Festive traybake

Enjoy all the flavours of Christmas in this balanced meal, without having to cook a whole dinner from scratch.  

 

Festive traybake: serves 4

Ingredients

  • 2 tablespoons oil (any type)
  • 2 large potatoes, cut into six pieces
  • 4 parsnips, chopped
  • 4 carrots, chopped
  • 1 cup Brussels sprouts, halved (optional)
  • 1 cup pigs-in-blankets
  • 1 teaspoon dried rosemary (or other dried herbs)
  • Pinch salt and black pepper
  • 1 tablespoon honey (optional, for a sweet glaze)

Method

This is a great one to prepare together as a family, and we’ve highlighted below who might do each step.

  1. Adult: Preheat your oven to 200°C/180°C fan/gas mark 6.
  2. Child: Place the roast potatoes, parsnips, carrots, Brussels sprouts, and pigs-in-blankets directly onto the baking tray. No extra bowls needed!
  3. Adult: Drizzle the oil over the ingredients.
  4. Child: Sprinkle the rosemary and salt and pepper evenly over everything. Use your hands or a wooden spoon to mix everything together right on the tray.
  5. Child: If you want a sweet glaze, drizzle the honey over the top.
  6. Adult: Place the tray in the preheated oven and bake for 30-40 minutes, until everything is cooked through, crispy and golden.
  7. Adult: Remove the tray from the oven and let it cool slightly.
  8. Child: Use a spatula to help serve portions directly from the tray.
