This delicious and easy pasta recipe is creamy, flavourful, and perfect for a quick weeknight meal with minimal clean-up!
Tomato and feta one-pot pasta: serves 4
Ingredients
- 1 tbsp oil (best with olive oil)
- 2 cloves garlic, minced
- 1 tin of chopped tomatoes
- 2 cups of dry pasta*
- 3 cups vegetable stock* (made with 1 stock cube and 3 cups boiling water)
- 1 block feta cheese*, crumbled
- 1 teaspoon dried oregano (optional)
- Salt and pepper, to taste
Method
- Heat the olive oil in a large pot over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- Add the tin of chopped tomatoes and stir to combine.
- Add the pasta, vegetable stock, and dried oregano to the pot. Stir well and bring to a boil.
- Reduce the heat to a simmer and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
- Stir in the feta cheese and season with salt and pepper. Mix until the feta is creamy and well combined.
