Chickpea curry

Enjoy this warming veggie chickpea curry recipe, which is quick and easy to make with store cupboard ingredients.

 

Chickpea curry: serves 4

Ingredients

  • 2 tbsp olive oil (or any other oil)
  • 1 onion, chopped
  • 2 tbsp curry powder
  • 1 can (400g) chopped tomatoes
  • 2 cans (400g each) chickpeas, drained and rinsed
  • Few handfuls of fresh/frozen spinach (optional)
  • Pinch of salt and pepper to taste
  • Fresh coriander (optional)

Method

  1. Heat the olive oil in a pan on a medium heat. Add the chopped onion and cook for 2–5 minutes while stirring, until soft.
  2. Stir in the curry powder and cook for another minute.
  3. Add the chickpeas and chopped tomatoes. Now is a good time to add the optional spinach.
  4. Simmer for 10–15 minutes until thickened.
  5. Season with salt and pepper and garnish with the fresh coriander if using.
  6. Serve with rice, bread, naan, chapati, baked potato or wraps.
